  • 260g pizza dough (store-bought or homemade)

  • 1 cup of Danielle’s vegan kimchi (chopped and squeezed to remove excess liquid) or your own with our recipe in our cookbook “Cooking with the Daou Sisters”.

    Preparation

    1. Preheat the Oven:
    Preheat your oven to 260°C (500°F) and line a baking sheet with parchment paper.

    2. Prepare the Dough:
    Divide the pizza dough into two equal portions.
    Roll each portion into a circle (about 8-10 inches in diameter).

    3. Assemble the Calzones:
    Place ½ cup of chopped kimchi on one half of each dough circle, leaving a 1-inch border.
    Fold the dough over the filling to form a half-moon shape.
    Press the edges together and seal them by crimping with a fork.

    4. Bake:
    Place the calzones on the prepared baking sheet.
    (Optional: Lightly brush the tops with olive oil for extra crispiness.)
    Bake for 10-15 minutes, or until the calzones are golden brown and cooked through.

    Serve:
    Let the calzones cool slightly before enjoying. These are perfect on their own or paired with a dipping sauce like marinara or sesame soy sauce.

    Tip: To get a crispy-bottomed crust it is very important to preheat the oven to a high temperature of 500F (260°C) for at least 30 minutes, preferably one hour before baking.
